This gluten-free chocolate brownie is easy to make, delicious and is on the healthier side of the sweet treat spectrum. Its lighter than the popular ‘fudgey’ brownie so in a sense its more ‘cakey’.
Its great to have a batch made up for when you have sweet cravings, which lets face it, seems to be part of life! LOL
So here it is..
120g oat flour
120g coconut or brown sugar
175g oat milk
70g coconut oil
160g peanut butter
50g cacao powder
Flax eggs (2tbsp ground flax+5tbsp water)
40g chocolate chips (or chopped up chocolate)
1/2 tsp salt
2 tsp baking powder
1 tsp baking soda
1. Mix the dry ingredients in a bowl to break up sugar lumps, then mix the wet ingredients in another bowl.
2. Mix everything together to form a smooth batter and add the chocolate chips.
3. Preheat the oven to 180 degrees celsius, pour the batter into a non stick or baking paper lined tray and bake for 25-30 minutes.
Be careful not to over-bake as this will result in a dry brownie, and no one, NO ONE likes a dry brownie!
