I have been eating this porridge for the last week for breakfast and I have to say, I am loving it! Its sweet, rich, chocolatey, filling and of course healthy. It makes for a perfect breakfast, as porridge oats are a great source of complex carbohydrates which means they release sugar slowly into the bloodstream leaving you fuller for longer.

Although I call this porridge chocolate porridge there is no actual chocolate in the recipe, instead I use raw cacao powder (not to be confused with cocao powder which is highly processed and usually contains added sugar. This recipe is also free from saturated fat.

Chocolate Porridge

Recipe Serves 2

1 cup Instant oats
1 cup water
1/2 cup plant milk
2 tbsp date paste (equal amount dates/water blended) or 1 tbsp maple syrup
1 tbsp ground flaxseed
1 tbsp raw cacao powder
1 tsp chia
1 tsp maca powder (optional)
big pinch of salt

Toppings
2 bananas
a few strawberries
1 tbsp peanut butter
pumpkin seeds

1. Put all the ingredients in a pan and cook until the oats are cooked (3 minutes on medium heat more or less).
2. Add extra water to create the desired consistency, I like my porridge quite runny, but others like it quite firm. You also may want to adjust the sweetness but adding more date paste or whichever sweetener you wish.
3. Put the porridge in a bowl and top with your favourite fruit and nut butter. I added 2 chopped bananas, a few chopped strawberries, pumpkin seeds and peanut butter.
